I like my
penne with pink sauce the more typical style- saucey.
Penne with Pink Sauce:
1. Cook Pasta in boiling salted water according to package instructions.
My husband on the other hand likes it crispy and baked like a
baked ziti.
So I usually prepare a lb. of pasta and make half of it the way I
like it and half the other way.
Penne with Pink Sauce:
This
recipe is usually a vodka sauce. If you like that taste you can add the vodka
after sauteeing the garlic. Let it simmer until it boils out to about half.
Ingredients:
1 16 oz
box Penne or any other pasta you would like
2
Tablespoons Butter or margarine
½
Teaspoon Red Pepper Flakes if you like it spicy I leave it out-¼ Teaspoon each
Salt and Pepper and a tablespoon for the water in pot
1 Large
Can Tomato Sauce- 15 oz I get Ungars
1/3 Cup
Parmesan Cheese
1/2 Cup
Heavy Cream ( I just use the smallest carton)
1 Clove Garlic, Minced or ½ Tsp
Garlic Powder
1 Tsp Parsley
Method:
1. Cook Pasta in boiling salted water according to package instructions.
2. In a
saucepan melt butter over medium heat being careful not to burn it- it melts
fast. Add garlic (if you chose to you use garlic powder just wait till you add
the seasonings and put it in at that point) let it saute' till it has released
its fragrances.
3. Add
salt, pepper and red pepper flakes (use a little less or none at al if you do
not like foods too spicy) Remove from heat allow to cool off a few
minutes.
4.Add
tomato puree and mix constantly as it tends to bubble and splatter. Simmer 5-10
minutes till it thickens quite a bit.
5. Next,
add the parmesan cheese in small portions whisking it in quickly and adding
some more.

Lastly, add the heavy cream.
7.Toss
cooked penne with sauce mix 2 tsps of parmesan with a tsp of parsley and
sprinkle a little over pasta before serving. I sometimes mix in some shredded
mozzarella cheese as well since I like my pasta extra cheesy.
